No-Bake Lotus Biscoff Slices
I have had the name ‘Biscoff Queen’ over on Instagram for a few years, as I do love to make Biscoff / cookie butter themed desserts. Biscoff is my all time favourite flavour, the nutty and caramelised notes are just mouth-watering! These slices contain two of my favourite sweet things in one incredible treat – Lotus Biscoff cookies and Biscoff cookie butter. If you are a fan of Biscoff spread, you NEED to make these biscoff slices!
The base of this Biscoff slice is made with dairy-free butter and crushed Biscoff biscuits just like a classic no-bake slice, but for this recipe, we are using Lotus Biscoff spread instead of caramel which gives us even more of that extra rich Biscoff flavour, along with Biscoff cookies instead of a chocolate coating. Each layer is literally Biscoff and is my DREAM DESSERT! If you think it couldn’t get any better, they are vegan, 4 ingredients, no-bake and easy to make! You are going to love these slices!

Top tips for best results
- Line your tin – It’s important to line your baking tin so you can remove the slab with ease. Leave some paper overhanging the sides of the tin to give you something to grip onto to lift it out. I also like to use a loose base tin for easy release.
- Crushing the biscuits – I use a food processor to crush the biscuits, alternatively you can also add them into a food safe plastic bag and use a rolling pin to crush them.
- Don’t burn the Biscoff spread – The Biscoff spread can burn easily, so to melt it for the filling fill a saucepan with water and place on the hob with a heat proof bowl on top. Add the Biscoff spread in the bowl and hat this way. It’ll melt it slowly without direct heat and less likely to burn.
- How to cut the slices – To cut the slices, use a sharp knife (not serrated). You can also heat it in some warm water then wipe dry before cutting.
- Chill before cutting – Once the Biscoff slices have set, remove from the fridge before cutting it into squares / slices.

Ingredients
Ingredients for the base
- 60g of dairy-free butter
- 200g of Biscoff cookies
Ingredients for the filling
- 250g of Biscoff spread (melted)
Ingredients for the biscoff topping
- Biscoff cookies (approximately 3/4 pack)
Instructions
Method (base)
- Line a loose base 8×8” square baking tin with grease proof paper.
- Add the lotus biscoff cookies in a food processor or a bag and rolling pin.
- Pour them into a bowl and mix with the melted butter until fully combined.
- Firmly press the mixture into the prepared baking tin. Use the base of a glass or back of a spoon to ensure its compact.
Method (biscoff spread)
- Melt the biscoff spread in the microwave in 20 second intervals or on the hob in a saucepan, making sure it doesn’t burn.
- Pour the melted biscoff spread over the top of the base and spread out until even.
Method (biscoff cookies)
- While the biscoff spread is still wet, add on the biscoff biscuits (refer to video for example).
- You’ll want to chill this until the filling has set, preferably overnight.
- Once set, use a sharp knife to cut into slices. I like to cut them so each slice has a single biscoff cookie on top (See photos and video for example).
- Serve and enjoy! Make sure these are kept chilled in the fridge to prevent them from melting!
Notes
To store: Store in the fridge for up to 7 days for a firmer texture.
Freezer: Up to 3 months. Slice before freezing and separate layers with grease proof paper. Thaw in the fridge before serving.
