I first came across Carrot Râpée on my Holiday in France a few years back. I still enjoy picking it up from the Supermarkets when I'm over there. I was amazed how reasonable this tasty side dish is!!
I fell in love with the taste and texture of it, so i decided to make my own so i can enjoy it in the comfort of my own home...and also to remind me of my wonderful Holidays abroad!
-4 Large Organic Carrots
-1 Lemon (Juice)
-Handful of Fresh Corriander Leaves
-1/4 Teaspoon of Black Ground Pepper
-2-3 Tablespoons of Extra Virgin Olive Oil
-Pinch of Dijon Mustard
-Pinch of Salt
Step 1- Wash and grate your Organic Carrots and place into a Mixing bowl. If you are not using Organic Carrots..Peel them.
Step 2- Add all the other ingredients into the Bowl and mix well until fully coated.
Serve with your favourite Salad, Rice Dishes, Burgers.... or you could either eat this as a snack on its own. Its a great healthy addition to your Childs lunch box. You could even add in some Extra Goodness like Sesame, Chia or Poppy Seeds...
I served my Râpée with some Coconut Rice, half a Garlic Infused Avacado and Tomatoes :) Flavours bond really well with each other.
Keep your delicious Carrot Râpée in a sealed Container in your fridge :)
