The best chocolate orange cupcakes

Vegan, Dairy-free, Wheat-free, Yeast-free

It's coming up to my sisters birthday and i wanted to make her one of her favourite birthday treats which are cupcakes, mixed with her favourite flavour, chocolate orange!
Chocolate and orange is such a delicious pairing!
I decided to make an orange flavoured cupcake with a thick & creamy chocolate frosting, topped off with a drizzle of dark chocolate, orange zest and a orange segment for decoration!
The cupcakes are moist, fluffy and bursting full of fruity flavour, whilst the frosting is just sweet enough with a hint of rich cocoa! Utterly mouth-watering!

These cupcakes are vegan, wheat & gluten-free and use 'VeganEgg' as the egg replacer!
I am enjoying using 'VeganEgg' as its one of the more effective egg replacers i have used in my baking!

Vegan/dairy-free frosting can be difficult to get thick enough to pipe and for it to keep its shape, but this recipe is perfect and the cake & frosting compliment each other really well!
If you like chocolate orange, this will become your favourite sweet treat recipe!

Preparation time- 5-8 minutes
Cooking time- 18-20 minutes

Ingredients
-240g of gluten-free flour
-1 & 1/2 teaspoon of baking powder
-1/2 teaspoon of baking soda
-1 large orange (zest)
-Pinch of salt
-1 egg substitute (I used 'VeganEgg')
-13g of vegan margarine/butter ( i used Tomor)
-115g of caster sugar
-2 teaspoons of orange extract
-80g of dairy-free yogurt (i used Alpro soya)

Ingredients for the frosting 
-230g of dairy-free butter (I use Tomor)
-2 & 1/2 cups of icing sugar
-1 & 1/2 teaspoon of vanilla extract
-4 teaspoons of Cocoa powder

To make the cupcakes
Step 1- Pre heat the oven to 180 degrees and line a cupcake tin with cases.

Step 2- In a mixing bowl combine the flour, baking powder, baking soda, orange zest and pinch of salt and combine with a wooden spoon.

Step 3- In a separate mixing bowl using a hand mixer or food processor, whizz together the egg substitute, margarine/butter, sugar and orange extract until smooth. 
Step 4- Add in the yogurt and give a final whizz until silky smooth.

Step 5- Pour the wet mixture into the dry mixture. 
Using a wooden spoon stir together until no lumps are left.
Step 6-  Fill each cupcake case with the delicious orange cupcake mixture, about 1/2 full with mixture.
Step 7- Pop the tray into the oven and bake for 18-20 minutes.
You will know they are done when you put a knife or skewer in and it comes out clean.

Step 7- Carefully remove the cupcakes from the tray and place onto a cooling rack.
Whilst the cakes cool, prepare the frosting!

To make the frosting 

Step 1- In a large mixing bowl, whizz up the butter until creamy!


Step 2- Add in the icing sugar a little at a time, along with the Cocoa and vanilla extract.

Whizz until thick & fluffy!
Step 3- Transfer the frosting into an icing bag fitted with a star tip nozzle.

Step 4- Once the cakes have fully cooled, pipe the frosting on to the cupcakes.
The frosting is very thick, and a pleasure to pipe! It looks amazing with the classic ice-cream swirl, soft peaks, rose......the choice is yours! 
Get creative :) 

I decorated my cupcakes with a drizzle of dark chocolate, orange zest & an orange segment!
You could even sprinkle on some crushed hazelnuts or grated chocolate!
Heavenly!!!

Keep the cakes stored in a sealed container! 
You can also freeze them for enjoying at a later date!
