Vegan soft pretzel recipe

Vegan, gluten-free, wheat-free, baked

I am so used to seeing soft pretzels at theme parks and abroad but to my surprise, never tried one even though I love the small, salted pretzels.
I have made some deliciously salted pretzels which are soft and scrumptious!
Perfect for breakfast, dipping into mustard, jam, chocolate spread, peanut butter...you name it!

This recipe is easy to follow and makes some of the nicest pretzels ever (as said by my sister).

Preparation- 2 hours
Baking time- 8 minutes
Makes- 8 large pretzels
Level- medium

Ingredients
-2 & 1/2 teaspoons of dry yeast powder
-150ml of almond milk (I use unsweetened)
-1 teaspoon of golden caster sugar
-150ml of warm water
-400g of plain flour (I use gluten-free)
-1/4 teaspoon of salt

Ingredients for the pretzel wash
-400ml of boiling water
-1/4 teaspoon of salt
-3 & 1/2 teaspoons of bicarbonate of soda

To make the pretzels
Step 1- Place the yeast, almond milk, sugar and warm water into a bowl and set aside for 20 minutes for the yeast to activate.

Step 2- Add the flour and salt into the yeast mixture and knead.
I used my Kitchenaid with the dough hook attachment, on a low/medium speed until a dough is formed. You can always knead my hand.

Step 3- Place the dough ball into a greased bowl, cover with a tea towel and set in a warm place and allow to rise.
This will take around 2 hours. The dough should double in size.

Step 4- Once the dough has doubled, divide it into 8 equal pieces.
Step 5- Form into pretzels.
I used this very helpful video (skip to 2:50) to help create the perfect pretzel shape.

To make the pretzel wash
Step 1- Pre-heat your oven to 230 degrees c and line 2 baking trays with grease proof paper.

Step 2- Place the boiling water, salt and bicarbonate of soda into a saucepan or bowl.
Step 3- Dunk each pretzel in to the wash and place onto the lined trays.
Repeat for all of the pretzels.
Step 4- Brush some dairy-free milk over the pretzels and place them into the oven and bake for 8-10 minutes.
They will turn a golden brown colour.

Step 5- Carefully remove them from the oven allow to cool on a cooling rack for 5 minutes before serving.

Best enjoyed within a few days of making. Store in a sealed container.
