Invite Mexican to your kitchen with these quick & easy black bean tortilla tacos.
I am the biggest fan of Mexican food and wanted to make some tacos to enjoy with fresh, homemade guacamole.


Tacos are a really good option if you are in a hurry or are needing a quick but delicious meal.
They are totally nutritious, cram packed full of delicious flavour and very simple to make. Perfect for lunch of dinner.

Ingredients
-1 teaspoon of oil (I use light olive oil)
-1 clove of garlic (crushed)
-1 small onion (finely chopped)
-300g of black beans (washed & drained)
-200g of sweetcorn (washed & drained)
-1 teaspoon of taco seasoning
-Pinch of salt & pepper
To serve
-Salsa
-1 teaspoon of oil (I use light olive oil)
-1 clove of garlic (crushed)
-1 small onion (finely chopped)
-300g of black beans (washed & drained)
-200g of sweetcorn (washed & drained)
-1 teaspoon of taco seasoning
-Pinch of salt & pepper
To serve
-Salsa
-Tortilla wraps
-Guacamole (Get my recipe here)

Step 1- Place the oil into a large wok/pan and heat on medium.
Step 2- Once the oil is hot, add in the crushed garlic and onion and shallow fry until golden, then add in the black beans, sweetcorn, seasoning and salt & pepper.
Cook until heated through stirring occasionally.
You can use taco shells, but i enjoy tortilla wrap tacos.
Step 3- Place a tortilla wrap on a flat pan and warm.
Spoon in some of the taco fillings into the tortilla taco and follow with a heap of fresh guacamole, tangy salsa, and a sprinkling of coriander leaves.
You could even add a sprinkle of cheese or a dash sour cream on top. The choice is yours!!

Best enjoyed immediately.
