Once cooled, they’re decorated with smooth icing to resemble cheerful gingerbread men, complete with iced details that make each one feel unique. Ingredients you’ll need
This recipe only requires 5 ingredients and is super easy to make. Below are some ingredient details, find the full written recipe and ingredient quantities in the recipe card at the bottom of the page.
- Ready-rolled shortcrust pastry: We use ready rolled shortcrust pastry to keep things simple and quick over the Holidays! One sheet of ready-rolled shortcrust pastry (such as Jus-Rol) forms the base of these pop tarts, making the recipe quick and easy while still giving a crisp, buttery texture once baked. Ensure your pastry is vegan friendly! You could also use a veganand gluten-free shortcrust pastry (my go-to is JusRol).
- Raspberry jam: A jar of raspberry jam provides a sweet yet tangy filling that pairs perfect with the pastry and sweet icing. You can easily swap this out for strawberry, cherry, or another favourite jam. You could even use Biscoff spread or a vegan chocolate spread.
- Dairy-free milk: A small amount of dairy-free milk is used to brush the pastry edges, helping the gingerbread man shapes seal in the filling, and also on top of each pastry before baking to ensure a golden finish.
- Icing / powdered sugar: The icing sugar is mixed with some milk to create a smooth icing, perfect for decorating the cooled gingerbread men pop tarts.
- Brown / yellow food gel: To give the gingerbread men the classic gingerbread colour, into the icing we add a sot of brown food gel and a tiny dot of yellow to add the warmth. Make sure to use vegan friendly food gels (not liquid food colour as this will add too much liquid into the icing and will be runny!). I’ve linked the food gels i use here! Alternatively, you could use cocoa powder, or melted Biscoff spread if you didn’t want to use food gel.

- Storing iced pop tarts
Allow the pop tarts to cool completely and let the icing fully set before storing.
Place them in a single layer in an airtight container to prevent smudging the icing
If stacking is necessary, separate layers with baking parchment. - Room temp storing
Store the pop tarts at room temperature for up to 2–3 days. Store in an air tight / sealed container.
For longer storage, keep them in the fridge for up to 5 days in an air tight / sealed container to prevent any moisture effecting the icing, then bring to room temperature before serving. - Avoid warm areas
Avoid storing the iced pop tarts in any humid or warm areas, as this can cause the icing to soften or become sticky!

Description
How to make the cutest little gingerbread shaped, jam filled and iced pop tarts for the Holidays! Vegan, no-egg, no-dairy and easy!
Ingredients
- 1 sheet of ready rolled shortcrust pastry (I use Jusrol shortcrust pastry)
- 1 jar of raspberry jam (or your chosen flavour jam, strawberry or cherry for example)
- Dairy-free milk (you can use any dairy-free milk for this recipe)
- 150g of icing / powdered sugar
- Brown food gel
- Yellow food gel
Instructions
- Preheat your oven to 180°C fan and line a baking tray with grease proof paper
- Unroll the ready-rolled shortcrust pastry. Use a mini gingerbread man shaped cookie cuter to chomp out the mini gingerbread man shapes. Cut out an equal number of matching shapes for the tops and bottoms of the pop tarts.
- Spoon a small amount of raspberry (or your chosen jam flavour) into the centre of half of the mini gingerbread pastry shapes, leaving a little border.
- Brush the edges lightly with some dairy-free milk, then place the matching pastry shapes on top.
- Press the edges down gently with a fork to seal, keeping the gingerbread shape intact. Crimping the edges will help prevent the jam oozing out of the pastry when its baking. Refer to video for example.
- Before baking, brush the top of each pastry with some dairy-free milk. This will help the pastry brown / turn a golden brown colour and add some crispiness.
- Place the pop tarts in the middle of the oven and bake for appropriately 10 minutes, or until lightly golden and cooked through.
- Once baked, remove from the oven and allow to cool completely.
- In a small bowl, add in the icing / powdered sugar and dairy-free milk. Mix together until a thick paste. Transfer some of the white icing into a piping bag and snip off a small tip. Set aside.
- Add some brown food gel with a tiny dot of yellow to create the perfect gingerbread man colour.
- Pipe or spoon the gingerbread icing on top of each little pop tart, allowing any excess to run off.
- Use the white icing to pipe on the gingerbread man details (refer to photos for example).
- Allow the icing to see at room temperature for at least 10-15 minutes then serve and enjoy.
Notes
Room temp storage: Store in an airtight / sealed container, up to 2 days (make sure the icing is fully set).
Fridge: Store in an airtight / sealed container with greaseproof paper, enjoy within 3-5 days.
Freezer: Freeze in layers with parchment, up to 2 months. Thaw before serving.
