Recipe tips and tricks
Using store-bought wafers, vegan Nutella, a chocolate and hazelnut shell is the fastest way to get that Ferrero-style flavour and crunch without making everything from scratch! Here are some of the best tips and tricks to make them without fail!
- Choose the right wafer: Use crispy waffles, vanilla, hazelnut or chocolate wafers work the best for the classic Ferrero Rocher flavour.
- Add chopped hazelnuts into the Nutella: This doesn’t only add crunch, but it helps thicken the filling! Also add to the chocolate coating.
- Freeze the bars before coating: Ensure the bars are fully set firm before coating in the chocolate. This will prevent them from collapsing when coating.
- Use roasted hazelnuts: Toasted hazelnuts allow more hazelnut flavour to each bar! You can roast them yourself by toasting hazelnuts in the oven until fragrant, then rub off the skins.
- Don’t over-fill the bars: When adding the Nutella filling to the bars, spread some Nutella onto a wafer, then pipe on a tube shape down the middle. Top with some whole hazelnuts.
- Storing: Store the bars in an air-tight / sealed container in the fridge for up to 3-4 days. This will help keep them crisp and prevent condensation on the chocolate shell!

Description
Make these super simple, no-bake Ferrero Rocher inspired bars with only 4 ingredients! Plus, they’re vegan friendly and easily made gluten-free!
Ingredients
Ingredients
- 1 pack of vegan friendly wafers (you can use gluten-free)
- 1 jar of vegan Nutella
- 200g of chopped hazelnuts
- 50g of whole hazelnuts
- 300g of dairy-free dark chocolate
Instructions
Method
- Optional step- Roast your hazelnuts. Preheat oven to 180 degrees. Line a baking tray with greaseproof paper. Arrange in a single layer on the prepared tray. Toast until browned and fragrant, stirring occasionally, around 10 minutes. Remove from the oven and wrap in a clean kitchen towel to steam for a minute. Rub the hazelnuts in the towel to remove loose skins and cool completely. Chop finely (leaving half of them whole).
- Add the Nutella in a bowl, add add in the chopped hazelnuts. Mix to combine, then transfer into a piping bag and snip off the tip.
- Spread a thin layer of smooth Nutella to the top of the waters, then pipe some of the hazelnut Nutella down the middle of each wafer (Refer to video for example).
- Press whole hazelnuts to the top of the wafers, in the Nutella which was just piped. Transfer onto a baking tray or board and place into the freezer until firm.
- Fill a small saucepan 1/4 full with water and place on the hob over medium heat. Add the dairy-free chocolate into a heat proof bowl. Place the bowl over the pan, creating a bain-marie. Allow the chocolate to melt, stirring with a heat proof spatula. Remove from the heat and allow to cool for a few minutes. Fold in 2 tablespoons of chopped hazelnuts.
- Remove the wafers from the freezer, place into the chocolate, using a fork to turn them over to get completely coated. Lift up out of the chocolate and allow any excess chocolate to drip back into the bowl.
- Place on a grease proof paper lined tray / board. Place in the fridge and allow to set.
- Once set, serve and enjoy!
