Vegan Smores Chocolate Pie
Take all the components of a iconic campfire snack and turn it into a most delicious s’mores pie! A buttery biscuit (graham cracker) crust, topped with a luscious dairy-free dark chocolate ganache layer, finished with a cloud of the fluffiest homemade & vegan vanilla marshmallow thats toasted to perfection! I always love making a s’mores themed dessert, especially around Autumn / Fall. You can’t go wrong with the combination of chocolate, marshmallow and cookies. This recipe is super quick and easy to make, made using vegan ingredients and easy methods, this recipe is great for all to make and enjoy!

Layers of a s’mores pie
This pie has 3 main elements which i have written about below in a short overview. Find the full written recipe and method in the card card at the bottom of the page.
- Base
The pie starts with a buttery, crunchy biscuit / graham base that provides the perfect crunch contrast to the soft and creamy layers on top. I use plain vegan digestive biscuits, you can also use graham crackers or a similar plain style cookie.
- Chocolate filling
The next layer is a rich, silky and smooth chocolate ganache filling. It’s ultra smooth, indulgent and packed with rich dark chocolate flavour, creating the perfect centre for the pie. I like to use a 70% or above dairy-free dark chocolate to make the filling extra decadent and chocolaty, which contracts with the sweet marshmallow on top.
- Marshmallow fluff
Finally on-top of the ganache is a layer of homemade vegan marshmallow fluff. It’s light, soft and fluffy and adds the sweetness and texture that makes this pie feel like a classic s’more. Oh, and its toasted to bring the toasted marshmallow flavour which is most loved in a classic s’mores campfire treat.

Vegan S’mores Chocolate Pie

Ingredients
Ingredients for the base
- 300g of plain digestive biscuits / Graham crackers
- 50g of dairy-free butter
Ingredients for the chocolate filling
- 480g of dairy-free heavy cream (I use The Coconut Collaborative Double Cream)
- 30g of cornflour / cornstarch
- 60ml of soya milk
- 75g of caster sugar (fine white sugar)
- 200g of dairy-free dark chocolate
- 1 tablepoon of dairy-free butter
Ingredients for the vegan marshmallow fluff
- 125g of aquafaba (liquid from a can of unsalted chickpeas)
- 1/2 teapoon of vanilla bean paste
- 1/2 teaspoon of cream of tartar
- 150g of caster sugar (fine white sugar, NOT powdered)
Instructions
Method (crust / base)
- Grease the scalloped edges of a 8” loose base / push up pie tin.
- Add the dairy-free butter into a small saucepan, place on the hob and heat over low until fully melted. Remove from the heat and add into a medium sized, heat-proof mixing bowl.
- Add the biscuits / cookies to a blender / food processor and blend until fine. Pour the crumbs into the melted butter and stir together using a wooden spoon or spatula. It should resemble wet sand, and when you press it between your fingers and should hold its shape. Press the mixture in the tin, making sure to compact it in using clean hands and up the sides of the tin. The more compact it is, the less likely it will crumble. Set aside while you make the chocolate filling.
Method (chocolate filling)
- Add 80g of the dairy-free cream to a medium mixing bowl, then whisk in the cornflour (cornstarch) until smooth and lump-free. This mixture will help to thicken the filling.
- Pour the remaining 400g of dairy-free cream into a medium sized saucepan. Add the cornflour mixture, milk and sugar, and place over a medium-low heat. Stir regularly and heat until the mixture is hot and steaming, but do not allow it to boil. You don’t want it to burn!
- Remove the saucepan from the heat and add the dairy-free dark chocolate. Leave it to sit for about 1-2 minutes, allowing the chocolate to soften, then whisk until the chocolate has completely melted and the mixture is super smooth and glossy.
- Add the dairy-free butter and stir until fully combined. This will give the filling an extra silky texture.
- Pour the chocolate filling on top of the crust and gently smooth the top with the back of a spoon or off-set spatula (refer for video for example).
- Allow the pie to cool at room temperature for around 10–15 minutes, then transfer it into the fridge.
- Chill for at least 4 hours, or preferably overnight, until the filling is completely set before adding on the toasted marshmallow fluff.
Method (marshmallow fluff)
- Ensure your mixing bowl and whisk is clean and free from any grease / moisture.
- Add the aquafaba, vanilla bean paste, and cream of tartar into a large bowl or the bowl of a stand mixer. Use a balloon whisk attachment on your stand mixer or a hand mixer with whisks to beat the liquid for around 1 minute until it starts to get fluffy.
- Slowly sprinkle in the sugar into the mixture, a tablespoon at a time while the mixer is on. This will prevent deflating the meringue. Continue to beat for about 10-15 minutes until stiff peaks form. The meringue will be thick, glossy and when you lift the whisk up.. it should stay as it is. Depending on your mixer, the speeds and temperature in your kitchen, it may take longer to ger to the right consistency.
- Once thick, spoon the marshmallow fluff on top of the set chocolate filling. Use an off-set spatula or back of a spoon to swirl the meringue out.
- Torch the meringue using a kitchen blow torch, being very careful to not over torch / burn the meringue.
- Use a sharp knife to cut the pie into Servings.
- Serve and enjoy!
Notes
Storage: Store the pie in a air tight / sealed container in the fridge. Best store the pie without the marshmallow fluff, and top day of serving to keep everything fresh and the marshmallow fluff fresh. Marshmallow fluff may deflate if stored too long.
What is aquafaba? Aquafaba is the starchy liquid which can be found from a can of chickpeas. Simply drain the whole chickpeas and use the water! It acts as a great egg replacer in vegan baking.
