Wheat-free & Sugar-free Scones

Vegan, Wheat-free, Gluten-free, Yeast-free, Sugar-free

Scones are in-between a Cake & Rock Cake, mainly filled with Fruity Jam & Cream.
I wanted to create some Sugar-free Recipes lately and came up with these tasty guilt-free Scones.
Scones can be eaten as a snack, afternoon Tea treat or for Breakfast! They can be eaten with Cream, Jam, Lemon curd...anything that you fancy!

This Recipe has been inspired by Jamie Oliver and I'm sure it will become a household favourite!

Makes- 8 Scones
...
Ingredients-
-1 cup of Gluten-free Self raising Flour
-1/4 cup White Rice Flour
-1/4 cup of Almond Flour (or Ground Almonds)
-125ml of Soya Milk
-2 Teaspoons of Baking Powder
-60ml of Coconut Cream
-1/4 Teaspoon of Salt

Filling-
-1 can of Coconut Cream (chilled upside down overnight)
-Low/Sugar-free Jam (I chose Strawberry)

Step 1- Preheat your oven to 220 Degrees, gas mark 4 and line a baking tray with grease proof paper.

Step 2- In a Large mixing bowl, combine the Flours, Ground Almond, Baking Powder and Salt.

Step 3- In a separate bowl, mix the Soya Milk with the Coconut Cream until smooth and pour into the dry mixture & slowly combine.
Step 4- With clean hands, massage the mixture together until it comes together & forms a soft Dough.
(This is the time you can add in Dried Berries/Fruits)
I made some Scones with Raisins for my Family, and i enjoyed the Sugar-free! 
Step 5- Lightly dust your surface & rolling Pin with Plain Flour. This prevents the Dough from sticking.
Roll the mixture until 1 & 1/2 or 2 inch thick and using a Cookie cutter, cut out circular shapes and place onto the lined baking tray.
Step 6- Lightly brush some Soya Milk over each Scone, and pop into the Oven to bake for 15-20 minutes or until golden & fluffy.

Step 7- After 20 minutes, remove the tray from the Oven and place the Scones onto a cooling rack.


Serve with Jam & Cream.

I served my Scones with Sugar-free Strawberry jam & natural whipped Coconut Cream which contains NO sugar! yay!!!

They are delicious, and would be lovely for a summers garden party or as an exciting breakfast option with a light spread of Lemon Curd, yummy!
