Loving Earth

I am not a huge morning eater. I never feel hungry or feel the urge for a morning meal, especially after just waking up.
Recently i have tried to get into eating more breakfasts. I think making it enjoyable and something to look forward to is key. 
I have been enjoying the Loving Earth 'Nut and Seed cereal'.

I am featured in Magazines!

I can't believe i am featured in some magazines i love & read, how amazing. It means the world to me to see my hard work get recognition. I wasn't expecting so many of my recipes to be featured!
Vegan Food & Living magazine feature some of the most mouth-watering recipes and a lot of vegan information, and is a really good read! There are inspirational stories, reasons to go vegan and news.
 It's appealing in the style its written and the information shared is relevant and up-to date.
One of my recipes featured is my raw cherry and almond slice, which is delicious! Along with a double page spread of my cool is that?!

The new vegan options at M&S

Okay, this has been along time coming and i am so excited to share this with you all.

As people are trying out veganuary & veganism is more popular, lots of supermarkets, restaurants and retailers are rushing to get vegan items on their menu's & shelves, which is amazing news for us and the animals!

Marks and Spencer (high street store) have just released a new line of vegan options, yay!
I recently picked up the 'edamame and black rice nourish bowl'. This bowl isn't only perfect for vegans, but anyone who likes bright, colourful and nourishing food.
This bowl is also packed full of protein and flavour. I will be picking it up again very soon!

I used to love pepsi and cola, but I became aware of their nasty ingredients and it shocked me what I was putting into my body, so I decided to look around for healthier alternatives and came across a company who make a range of delicious fizzy drinks which do not contains artificial sweeteners. yay

Quinoa & black bean burgers

Recently, i've been craving warm & hearty foods. After Christmas i wanted to get back to cooking healthy dishes to start the new year.
 I wanted to re-create the Homemade Burger Co. Veg Mex burger as i am a huge fan of that burger. Yum!!!
I have created a delicious Mexican style, protein packed quinoa & black bean burger which is full of nutrients & goodness, topped off with my delicious, homemade guacamole.
Guacamole is my favourite dip/super food! I eat it all the time :)
Quinoa known as a super grain due to its amazing amount of protein and other minerals & nutrients like iron, magnesium and fibre etc...

These burgers are healthy, 100% vegan, gluten-free and easy to make, paired with guacamole, salsa and salad, are extremely tasty and filling.
Perfect for summer BBQ's or to enjoy on a cool, winters night! 

Makes- Approximately 12 burgers

Ingredients for the burger
-2 cups of cooked quinoa 
-1 cup of black beans
-1/2 cup of cannellini beans
-2 small garlic clove
-1/2 white onion
-1/4 teaspoon of salt
-Pinch of ground cumin
-Pinch of cayenne pepper
-1/4 teaspoon of chilli flakes
-1/3 cup of gluten-free bread crumbs 
-3 tablespoons of light olive oil
-Guacamole (Recipe here)
-Red onion
-Burger buns (Gluten-free)

Step 1- Wash & drain the quinoa and place into a large saucepan with a good amount of water.
Bring to the boil and then simmer for around 20 minutes, until the quinoa is clear and cooked then drain fully.
Step 2- Place all ingredients into a food processor and whizz up. 
Leave a little chunky for texture.
Step 3- Place the burger mixture into a bowl and pop into the fridge for 25 minutes.

Step 4- Form the mixture into burgers and place onto baking paper.
Pop the burgers back into the fridge for 10 more minutes.
Step 5- Coat a large wok/ pan with a drizzle of light oil and heat on low.

Step 6- Cook the burgers 5-8 minutes on each side until brown & crispy.
Place the cooked burgers onto kitchen paper to remove any excess oil (optional)

Make your burger by adding a slice of lettuce onto a bun, along with tomatoes, red onion, guacamole, salsa and sesame seeds...

Serving option: Serve whilst hot with homemade chips and salad.

You can freeze the burgers in a sealed container for later use, but defrost fully before cooking.

Veganism may sound scary & a big change, but it can be very easy these days!
Most high street restaurants and supermarkets have different options available for vegan diets - which is amazing!
A little tip is to ask a restaurant worker what options are available for your specific dietary needs, and they are usually very helpful. Even starting by making one of your daily meals into a vegan meal, you'll be making a positive change and you will also feel the health benefits too, which feel great! :)
