Quick & easy authentic potato curry

Vegan, wheat-free, gluten-free
I recently came across Zim's Tribe at my local vegan market. Vegan markets can be a great way to discover some new and amazing vegan products & foods.
I LOVE Indian food and all of the delicious spices. I saw the Zim's Tribe stall and it instantly caught my eye. I picked up one of the mild marinade sauces and OH MY GOODNESS, I must say it is one of the best marinades/sauces I have ever tried in my life! It's safe to say, me and my sister are obsessed!

Their marinades range from Mild, Medium, Hot and a new addition... Extra Hot which I don't think I could handle :P

I decided to include the marinades into some recipes (Samosa recipe coming soon), and what better way than a classic potato curry?!
I love to make potato curry as they are quick and easy to make and taste amazing when paired with rice, naan bread etc. You could even add in some onions to make it more of a vegetable curry, just a little option for you guys.
I included the mild marinade into this curry and it tastes delicious! It's very easy to make and is 100% vegan and gluten-free.

Preparation- 5 minutes
Cooking time- 20 minutes
Serves- 4-5 serving
Level- Easy

-5 medium/large potatoes (chopped into cubes)
-Handful of fresh spinach (roughly chopped)
-50ml of water
-Zim's Tribe mild Marinade
-1/4 teaspoon of salt

Step 1- Peel, wash and chop the potatoes into small squares/chunks and place them into a large pan along with water. Make sure the water is covering the potatoes.
Par-boil for a few minutes until they have softened slightly.

Step 2- Once slightly soft, drain the potatoes and pop them into a large wok/pan over medium heat along with 50ml of water, marinade and salt.
Cover with a lid and cook for 10-15 minutes.
Add more water if necessary.
Step 3- Wash and chop a large handful of spinach and add it to the curry and cook for another 5 minutes. 

Serve immediately with rice, samosas (recipe coming soon), naan bread/flatbread etc.
