Easy vegan sausage rolls

The BEST Vegan Sausage Rolls, which also happen to be gluten-free. These delicious little rolls are packed full of flavour, you’ll go crazy over these!

When I was younger, I was a sucker for a sausage roll at a party and haven’t had one since, until now. These rolls are perfect to serve up at parties, events as finger food etc. They’ll be loved by everyone! I took inspiration from ‘The Happy Pear’ to make these rolls. I used gluten-free puff pastry and a gluten-free soy sauce so everyone will be able to tuck in.

How to make the BEST vegan and gluten-free sausage rolls, with only a few ingredients and super quick + easy steps!


Ingredients

Ingredients for the ‘vegan sausage’

  • 1 can of chickpeas (washed & drained)
  • 4 tablespoons of ground flaxseeds
  • 100g of walnuts
  • 1 tablespoon of oats (I use gluten-free)
  • 2 tablespoons of soy sauce (I use gluten-free)
  • 3 garlic cloves
  • 2 tablespoons of oil
  • 1/2 teaspoon of smoked paprika
  • 1 tablespoon of dried herbs
  • 1 teaspoon of dried coriander
  • 1 teaspoon of ground black pepper
  • 1/4 teaspoon of salt

+

  • 1 sheet of vegan puff pastry (I use JusRoll Gluten-free Puff Pastry)

Instructions

To make the sausage rolls

  1. Pre-heat your oven to 180 degrees c and line a baking tray with greaseproof paper.
  2. Wash and drain the beans.
  3. Place the chickpeas, ground flaxseed, walnuts, oats, soy sauce, garlic cloves, oil, smoked paprika, herbs, coriander, black pepper and salt into a food processor/blender and whizz up until a sausage-like texture. This will take around 3-5 minutes.
  4. Unroll the puff pastry and cut it in half.
  5. With clean hands, grab some of the sausage mixture, roll it into logs and place onto one side of the pastry sheet (as seen in the photo below).
  6. Brush some dairy-free milk on the edges of the pastry sheet and fold the pastry over the sausage.
  7. Using a fork, press the pastry layers together to create a seal (as seen in the photo above).
  8. Cut into servings and place onto the lined baking tray.
  9. Brush some dairy-free milk over the top of the pastries and pop into the oven for 15-20 minutes or until golden in colour.
  10. Serve hot with a dipping sauce or brush over some dairy-free butter.

Notes

To store: Store the sausage rolls in a sealed container in the fridge. Best eaten within 4 days of making.

    Oh wow, these are amazing. I couldn’t get individual sheets of pastry only the block so struggle to judge the amount of pastry to use but was only running these as a tester really to have a Christmas morning nibble for myself while everyone else eats sausages. The ‘meat’ is so nice. These make a great dinner or snack and would 100% be loved by non- vegans. New recipe for my rotation!
