Say hello to the zestiest little truffles. My no-bake vegan lemon truffles are a delightful fusion of melt in the mouth creamy lemon biscuit truffle and a creamy white chocolate and lemon coating. Ingredients you need:

Here is a list of ingredients you’ll need to make these lemon truffles. You can find the full recipe and ingredients list in the recipe card at the bottom of this page.

  • Golden Oreo’s – You want to use a plain / vanilla biscuit for this recipe. I opted for golden Oreo’s as they have a delicious sweetness which pairs really well with the zesty lemon and creamy cream cheese. Swap them out for a gluten-free biscuit to make this recipe gluten / wheat-free and suitable for Coeliacs.
  • Cream cheese – Make sure to use a good quality dairy-free cream cheese. My go-to’s are Violife Original Creamy and supermarkets own branded vegan cream cheese. If situated in the US, Mykonos is great!
  • Lemons – As we’re using the zest of the lemons, make sure to pick up un-waxed!
  • Dairy-free white chocolate – Use your favourite vegan friendly white chocolate. I love iChoc Vanilla, Sainsbury’s deliciously Free From White Chocolate and Moo Free White.
  • Lemon extract / flavouring – This is completely optional but add a small drop into the melted chocolate for ultra zingy lemon flavour.
  • Yellow food gel – Optional but use a dot of yellow food gel to colour the chocolate a lemon colour.
  • Mint leaves – Add a fresh mint leaf to the top of the truffles to make them look like little lemons, they’re adorable!

Description

How to make quick and easy vegan lemon truffles, which is creamy, sweet and zesty. Perfect for Summer!

Ingredients you’ll need

  • 150g of golden Oreo cookies
  • 60g of vegan / dairy-free cream cheese
  • Zest of 1 lemon (un-waxed)
  • 200g of dairy-free white chocolate

Instructions

Method

  1. Line a baking tray with greaseproof paper. Set aside.
  2. Place the cookies in a food processor or blender and whizz up until crumb-like. You could crush them using a rolling pin if you don’t have an electric mixer.
  3. Pour the cookie crumbs into a large mixing bowl & add in the dairy-free cream cheese and lemon zest. Mix the cream cheese, lemon & cookies together until fully incorporated.
  4. With clean hands, roll the mixture between your palms until you have small ‘truffle’ like balls and place them onto a lined tray. I like to roll them into 20g balls. TIP- Add a toothpick into each truffle, this makes it easy for coating in the chocolate.
  5. Pop the tray into the freezer and allow to set for around 25 minutes.
  6. About 5 minutes before the balls are ready to come out of the freezer, pop the white chocolate into a bowl on top of a saucepan with boiling water, creating a bain-marie and allow the chocolate to fully melt. Optional, but you an add in a dot of yellow food gel and 1/2 teaspoon of lemon flavouring / extract.
  7. Remove the truffle balls out of the freezer & dunk them in the chocolate! Tap the toothpick against the side of the bowl to allow any excess chocolate to drip back into the bowl.
  8. While the chocolate is wet, place on a small mint leaf (optional but gives the lemon effect). Watch the video tutorial here. 
  9. Place the truffles back onto the lined tray and place them into the freezer to set. As the truffles are very cold, the chocolate will set almost immediately so they’ll only need to be in the freezer for around 5-10 minutes.
  10. When the truffles have set, remove the toothpicks.
  11. Serve and enjoy!

Notes

To store: Keep the truffles fresh by storing in an air-tight / sealed container in the fridge and enjoy chilled. Don’t leave out in the sun or in a warm atmosphere as they may melt.
